Our
Gloucester Old Spot Pork
This old rare breed produces meat that isn’t
a bit like supermarket pork. It’s moist and sumptuous and you get proper
crackling. Our
pigs
are reared outdoors
where they can dig freely and graze on grass. We feed them locally grown
wheat, barley, peas and swedes, and apples from our cider orchard.
We oak smoke and dry cure our Bacon, Ham and Gammon in the traditional way, so it doesn't
shrink in the pan. Joints can be any size from
1kg for 2 people, up to about 5kg for a whole leg, or 8kg for a whole
rolled rib joint. I am often asked for pork recipes and will be happy to
send you some if you email me.

This comes from
the back of the pig and makes a wonderful roasting joint with crispy

Ham is made by
cooking gammon, which is made by dry curing a leg joint. A whole ham
joint makes a fantastic family dinner, and is delicious both hot and
cold in sandwiches.
